扶雄,男,教授,博士生导师。1988-1995年在
四川大学攻读学士和硕士学位,硕士毕业后分配至
华南理工大学食品科学与工程学院任教至今,1997-2002年在华南理工大学攻读博士学位,2003-2006年在华南理工大学开展博士后研究工作。现任
华南理工大学研究生院常务副院长,国家热带特色健康食品国际科技合作基地主任,中美功能糖合作研发中心主任,功能碳水化合物学科方向及健康食品工程团队负责人,兼任
广东省食品学会副理事长、
广州市食品行业协会专家指导委员会副主席。
主要从事植物活性
多糖、
多酚活性评价及调糖降脂健康食品研发等工作,在国际学术刊物发表SCI收录论文100多篇,入选ESI农业科学(含食品与营养科学)世界前1%科学家;申请国家发明专利60多件,其中授权发明专利46件。
